- 2 tbsp olive oil or butter
- 1 large onion, diced
- 3 carrots, chopped
- 3 celery stalks, chopped
- 3 garlic cloves, minced
- 2 medium potatoes, cubed
- 1 small cabbage or 2 cups kale, chopped
- 1 apple, peeled and diced (optional)
- 6 cups vegetable or chicken broth
- 1 cup apple cider (optional)
- 1 can diced tomatoes (optional)
- 1 tsp dried thyme
- 1 bay leaf
- Salt & pepper to taste
Add the aromatics and sauté. Heat the oil in a large pot over medium heat. Cook the celery, carrots, and onions for around five minutes, or until they are tender. . Stir in garlic and cook for another minute.
Add Potatoes & Greens – Toss in potatoes and cabbage/kale, stirring to combine.
