Ingredients
  

  • 1 medium frost squash
  • 1/2 tablespoons of nutmeg
  • 1/4 cup of chopped pecans
  • 1 teaspoon of ground cinnamon
  • Salt and pepper to taste
  • 2 tablespoons of maple syrup
  • 2 tablespoons of olive oil
  • Fresh thyme leaves for garnish

Instructions
 

  • First preheat your oven to (200°C) 400°F.
  • Now toss the cubed frost squash with olive oil, nutmeg, cinnamon, salt, andpepper in a bowl.
  • Spread the seasoned squash evenly on a baking sheet and roast for 20-25minutes, until these tender and slightly caramelized.
  • Drizzle maple syrup over the roasted squash and toss gently to coat.
  • Now sprinkle chopped pecans on top and these return to the oven for anadditional 4-5 minutes, and allowing the pecans to toast.
  • Now remove from the oven, garnish with fresh thyme leaves, and serve hot.

Choose squash that is firm, heavy, and free from blemishes or soft spots. Store in a cool, dark place for up to a month or in the refrigerator for a few weeks. Cut squash should be these wrapped and refrigerated.
