Ingredients
  

For the Base:

  • 1 ½ cups (180g) all-purpose flour
  • ½ cup (100g) brown sugar
  • ½ cup (115g) unsalted butter, cold and cubed
  • 1 tsp ground ginger
  • 1 tbsp instant coffee granules (or espresso powder)

For the Topping:

  • 2 large eggs
  • ½ cup (100g) brown sugar
  • ¼ cup (60ml) golden syrup (or honey)
  • 1 tsp vanilla extract
  • 1 tbsp finely grated fresh ginger
  • 1 ½ cups (150g) walnuts, roughly chopped
  • 1 tbsp all-purpose flour (to bind the topping)

Instructions
 

Step 1: Prepare the Base

  • Preheat your oven to 350°F (180°C) and line an 8x8-inch (20x20cm) baking pan with parchment paper.
  • In a food processor, pulse the flour, brown sugar, butter, ground ginger, and coffee until the mixture resembles breadcrumbs.
  • Press this mixture firmly into the prepared pan, ensuring an even layer.
  • Bake for 15 minutes until lightly golden. While you prepare the topping, take it out and allow it to cool slightly.

Step 2: Make the Topping

  • In a bowl, whisk the eggs, brown sugar, golden syrup, vanilla, and fresh ginger until smooth.
  • Incorporate the flour and chopped walnuts until thoroughly blended.
  • Pour this mixture over the pre-baked base, spreading it evenly.

Step 3: Bake to Perfection

  • The topping should be set and just a little stiff to the touch after 20 to 25 minutes of baking in the oven.
  • After letting it cool fully in the pan, cut it into squares.
