Ingredients
  

  • Granulated sugar 2 cups 
  • Water 1/2 cup 
  • Peppermint extract 1 tsp 
  • Glucose syrup 1 tbsp 
  • Unsalted butter 1/2 cup 
  • White chocolate1 cup 
  • Confectioners' sugar for dusting

Instructions
 

  • The first in a large saucepan, dissolve sugar in water over low heat. Add glucose syrup, stirring until a candy thermometer reads 240°F.
  • The second step is to remove from heat, mix in peppermint extract, and let it cool to 212°F. Beat the mixture until it thickens, then pour into a lined pan.
  • Now melt white chocolate and butter, adding green coloring if desired. And pour the chocolate over the mint base, spreading evenly. Now refrigerate until set, then dust with confectioners' sugar.
