Ingredients
  

  • 225g unsalted butter
  • 225 g of self-raising flour
  • 4 tbsp. coconut milk
  • 2 tsp baking powder
  • 4 large eggs
  • 225g caster sugar
  • 50g desiccated coconut

Instructions
 

  • Step 1: Preheat the your oven to 180°C to160°C. Then grease and line two 20cm cake tins with parchment paper, ensuring the base and sides are fully covered.
  • Step 2: In a big mixing bowl, cream together the caster sugar and butter until the mix well becomes fluffy.
  • Step 3: Gradually add the eggs to the creamed butter and sugar mixture, ensuring each egg is fully incorporated before adding the next. This will help prevent curdling. If the mix starts to curdle, add a some of flour and continue mixing until smooth.
  • Step 4: Sift the self-raising flour into the bowl containing the butter, sugar, and egg mixture. Next, add the desiccated coconut and continue folding until evenly distributed.
  • Step 5: Now a pour the milk into the pot and mix until the batter has a smooth consistency. The addition of milk helps to keep the cake moist and adds a subtle creamy flavor.
  • Step 6: Divide the cake batter equally between the prepared cake tins. Now place the tins in the preheated oven and bake for 20 minutes. 
  • Step 7: When the cakes are well baked. Now take them out of the oven and let them cool the few minutes. Next transfer the cakes to a wire rack to cool completely.
