Ingredients
  

  • 2 pounds of chicken thighs
  • 2 tablespoons of olive oil
  • 3 cloves of garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon of ground turmeric
  • 1 onion, finely chopped
  • 1/4 cup golden raisins
  • 1 tablespoon honey
  • 1 teaspoon of ground coriander
  • 1/2 teaspoon ground ginger
  • 1 cup of chicken broth
  • 1/2 cup green olives, pitted
  • 1/4 cup dried apricots
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil in a pan over the medium heat. Now add the chopped onion and sauté until, and minced garlic they turn golden.
  • Now sprinkle the ground cumin, coriander, cinnamon, turmeri, paprika, salt, and black pepper over the sautéed onions and garlic. Stir well to coat the aromatics with the delightful blend of spices.
  • Gently place the chicken thighs skin side down, into the tagine or skillet. Them to cook for about 5 minutes until the skin turns golden brown. Gently flip the chicken thighs to ensure both sides are evenly cooked.
  • Introduce the preserved lemon and green olives to the tagine or skillet. These ingredients infuse the dish with a tangy and briny essence that elevates the overall flavor. Now pour in the chicken broth, cover the skillet, and simmer the dish for approximatelyunt the chicken is cooked through and tender.
  • Before serving, garnish the tagine chicken with a generous sprinkle of freshly chopped cilantro.
